Sulforaphane is the substance in broccoli that is responsible for many of its health benefits. Only a few products worldwide contain the true, free and stabilized sulforaphane commonly studied by scientists. Almost all other dietary supplements contain the precursor of sulforaphane, known as sulforaphane glucosinolate or glucofarin.

To absorb sulforaphane glucosinolate, the human body must first convert it into free sulforaphane. This requires a specific enzyme called myrosinase. In nature, both sulforaphane glucosinolate and myrosinase are found in the broccoli plant. However, food processing, including cooking, breaks down most of the myrosinase enzyme in broccoli, so very little sulforaphane ends up in the bloodstream.

Clinical studies (1) show that, without the enzyme myrosinase, only 10% of sulforaphane glucosinolate is converted to free sulforaphane and absorbed by the body. The rest is excreted. This small conversion is facilitated by gut bacteria and therefore varies from person to person.

When sulforaphane glucosinolate and myrosinase are administered simultaneously, a significantly higher conversion of sulforaphane glucosinolate is achieved. Clinical studies estimate the conversion to be about 40%, again with variations from person to person (1).

It can be inferred that only part of the ingested sulforaphane glucosinolate can be converted into the free sulforaphane, which is known for its many health benefits.

Moreover, it is important to note that sulforaphane glucosinolate has a higher molecular weight than free sulforaphane. Thus, 2.5 mg of sulforaphane glucosinolate generates only 1 mg of free sulforaphane. This is important when estimating how much sulforaphane glucosinolate in a capsule actually provides free sulforaphane to the body.

In making this estimate, we must consider two aspects:

1. How much sulforaphane glucosinolate is converted to sulforaphane (40% with myrosinase and 10% without myrosinase enzyme)?
2. How much of this converted sulforaphane glucosinolate will eventually be free sulforaphane from a weight perspective (2.5 mg sulforaphane glucosinolate becomes 1 mg free sulforaphane)?

Thus, if a capsule contains 100 mg of sulforaphane glucosinolate and no myrosinase is present, according to the results of the aforementioned clinical studies, 90 mg is excreted without having a chance to enter the bloodstream. Only 10 mg is converted into free sulforaphane. Moreover, because of the difference in molecular weight, 10 mg of sulforaphane glucosinolate is converted into only 4 mg of free sulforaphane.

In other words, 25 mg of sulforaphane glucosinolate generates 1 mg free sulforaphane.
