Lycopene, a bright red carotenoid pigment, is a naturally occurring substance found in certain fruits and vegetables. Lycopene is found particularly in tomatoes, watermelons, pink grapefruits, papayas and apricots and contributes to their characteristic color.
This compound, discovered in tomato plants in 1876, has been the subject of extensive scientific research ever since. As a member of the carotenoid family, lycopene shares structural similarities with other pigments such as beta-carotene. However, its unique molecular configuration provides specific properties.
In recent decades, research on lycopene has expanded significantly, with thousands of studies devoted to understanding its characteristics and potential roles in various biological systems. Lycopene has also been studied in relation to the mevalonate pathway.
Given the widespread interest in lycopene, many people find it helpful to include foods rich in it in their diet. Lycopene is found in ample amounts in certain fruits and vegetables. In addition, some choose to increase their intake by taking dietary supplements that contain lycopene.
Lycopene is generally difficult to absorb because of its poor solubility in water. It has been suggested that ingestion of lycopene along with oil may increase its bioavailability. However, our lycopene is embedded in a matrix of corn starch, which increases its solubility in water.
